Campsite Vegetable Medley
Campsite cuisine doesn’t have to revolve around hot dogs and potato chips, and in fact, there are some easy ways to get more veggies into your diet with side dish recipes like this one.
INGREDIENTS:
- 1 zucchini, sliced
- 1 small head of broccoli, chopped
- 2 pieces corn on the cob, sliced into quarters
- 1 onion, chopped
- 1 tbsp. extra virgin olive oil
- 1 tbsp. parsley
- 1/2 tsp. salt
- ½ tsp. black pepper
DIRECTIONS:
- Turn your camp grill onto medium heat.
- Add olive oil to skillet and add vegetables.
- Add spices and toss until tender and lightly browned.

Toasted Campsite Granola
Making your own granola is easy, whether you choose to make it at home in advance of your camping trip or while onsite at the park. By toasting your granola rather than just mixing it, you’ll get an awesome aroma and flavor that will get you in the mood for camping.
INGREDIENTS:
- 6 cups oats
- 2 cups almonds
- 1 cup dried blueberries
- ½ cup extra virgin olive oil
- ½ cup maple syrup
DIRECTIONS:
- Place cast-iron pan over an open fire.
- Add almonds, tossing to ensure they don’t burn.
- Add oats and cook until lightly browned.
- Remove from heat and add oil and syrup to reach desired consistency.
- Add blueberries and eat while warm for breakfast or snacks.

Cajun Shrimp Foil Pack Recipe
It is definitely possible to enjoy delicious fish at your campsite, especially with a little prep work in advance. Foil packet recipes are great when you’re camping because they eliminate clean-up messes and save you time when camping. Here’s one to try.
INGREDIENTS:
- 12 pieces corn on the cob
- 3 red potatoes, cubed
- ½ cup raw carrots
- 20 or so uncooked shrimp
- ½ cup extra virgin olive oil
- ¼ cup vegetable broth
- 1 tbsp. Cajun seasoning
- Salt and pepper
DIRECTIONS:
- Fire up your camp grill.
- Distribute ingredients on heavy-duty aluminum foil sheets of 12×18 inches each.
- Add olive oil to and a tablespoon of broth to each packet.
- Add seasoning.
- Use fingers to fold over and tightly seal packets.
- Grill for about 30 minutes, flipping packets over at 15 minutes.
- Carefully open packets and allow to cool before eating.
