Lots of people gravitate towards seafood dishes in the summertime after fun fishing trips or to lighten up meals as an alternative to beef and pork. However, seafood can be tailored to fall tastes as well to help you get more nutrients in your diet in a festive and delicious way.

Shrimp and Apple Salad
There’s no need to save your seafood just for dinner because fish makes a great lunch as well. This salad is easy to make and combines shrimp with fresh fruit and vegetables for a healthy meal.
INGREDIENTS:
- 1-pound raw shrimp
- Half an orange with seeds removed
- Salt and pepper to taste
- 2 tbsp. hot sauce
- 2 tbsp. extra virgin olive oil
- 3 tbsp. fresh orange juice
- Bag of washed Romaine lettuce
- 2 apples (any type) sliced thinly
- 1 sliced cucumber
- 3 tbsp. chopped walnuts
DIRECTIONS:
- Heat a large pot of water to medium-high heat on the stove and add the orange, salt and pepper, one tbsp. hot sauce, and shrimp
- Cook until shrimp are done and remove shrimp so they can cool
- Place lettuce on plates and top with apples, cucumbers, and shrimp
- Combine olive oil, orange juice, and other tbsp. hot sauce to make salad dressing
- Drizzle dressing over salad and add walnuts on top

Coconut Tilapia with Pomegranate-Tomato Salsa
There’s more to fall flavors than just pumpkin and squash! We love coconut and pomegranate in the fall season to add more life and flavor to healthy dishes. Here’s a recipe that adds those flavors to tilapia to awaken your taste buds this season.
FISH INGREDIENTS:
- 4 tilapia filets
- 3 tbsp. coconut oil
- 1/3 cup shredded coconut
- Lemon juice from half a lemon
- Salt and pepper to taste
SALSA INGREDIENTS:
- ½ cup pomegranate arils
- 1 finely chopped tomato
- ½ finely chopped onion
- ¼ cup chopped cilantro
- Lime juice from half a lime
- Salt to taste
DIRECTIONS:
- Toast coconut in a small pan over low-medium heat while stirring for about 5 minutes
- Toss until evenly toasted and set aside
- Season tilapia with lemon, salt, and pepper and put in a large skillet on medium heat with coconut oil
- Cook one side of tilapia for about 4 minutes
- Flip tilapia and add half of toasted coconut
- Cook other side of tilapia and add remaining toasted coconut
- Combine salsa ingredients and add to the top of cooked fish
Caramel and Brown Sugar Salmon
INGREDIENTS:
- 4 salmon filets
- ¼ tsp. cayenne pepper
- Salt to taste
- ¼ cup brown sugar
- 2 tbsp. Dijon mustard
- 1 tbsp. butter
- 2 tsp. dill weed
DIRECTIONS:
- Add cayenne pepper and salt to salmon before cooking
- Combine other ingredients in a small bowl
- Put salmon onto a greased broiler pan, skin-side down
- Broil for about 5 minutes
- Brush half of mixture in the bowl onto fish
- Broil about 8 minutes longer
- Brush with remaining mixture occasionally while cooking
- Serve with seasonal veggies, such as squash as a side dish
